Egg Chili Fry
An easy breakfast treat.
Ingredients 6 eggs 3 medium size onions, chopped fine 3 medium size tomatoes, chopped fine 1 or 2 green chilies, chopped fine (according to taste) 2 T. cilantro, chopped fine 1 lb bacon, chopped fine. 4 to 5 T. canola oil Salt and pepper to taste (optional)
Directions Break eggs in a bowl and set aside. Sauté onions in oil for 2 minutes on medium heat, and add tomatoes and green chili and fry for 1 minute. Next, add bacon and eggs and fry for 1 minute. Lastly, add salt and pepper to taste. Turn the heat off and sprinkle the chopped cilantro over the egg chili fry and enjoy!
